Ripe Tomato Relish
Ingredients
- 6 to 7 lb ripe tomatoes skinned and chopped fine
- 6 c onions chopped fine
- 2 green peppers chopped fine
- 14 c salt
- 5 c sugar
- 2 c vinegar
- 2 oz mustard seed
- 12 tsp red pepper
Directions
- Put tomatoes onions and peppers in a pan
- Pour salt over them and let set overnight
- Next day put in hot sterilized jars Mix sugar vinegar mustard seed and red pepper
- Bring to a boil and simmer for 30 minutes to an hour until it thickens
- Pour over vegetables in jars and seal with lids
- Makes 6 pints
