Roast Chicken With Mushroom Gravy

Ingredients

  • 3 12 lb chicken cleaned
  • 2 Tbsp butter
  • 1 onion chopped fine
  • 12 lb fresh mushrooms cleaned and diced
  • 1 tsp chopped fresh parsley
  • 12 tsp tarragon
  • 1 12 c beef stock heated
  • 1 Tbsp tomato paste
  • 1 Tbsp cornstarch
  • 3 Tbsp cold water
  • juice of 1 lemon
  • salt and pepper

Directions

  1. Preheat oven to 425
  2. Place chicken in pan
  3. Season with salt and pepper
  4. Brush with lemon and butter
  5. Roast 30 minutes in oven
  6. Reduce heat to 350
  7. Cook for 1 14 hours more
  8. Remove cooked chicken from pan and set aside
  9. Discard 23 fat from pan Place pan on stove over high heat
  10. Add onion
  11. Cook 3 minutes stirring often
  12. Add mushrooms and seasonings
  13. Mix well
  14. Cook 4 minutes over high heat
  15. Mix beef stock and tomato paste
  16. Cook 3 minutes more
  17. Dissolve cornstarch in cold water
  18. Stir into mushroom sauce and cook 1 minute
  19. Serve roasted chicken with gravy and roasted potatoes
