Roast Fresh Ham

Ingredients

  • 2 Tbsp salt or less to taste
  • 1 14 tsp ground ginger
  • 4 bay leaves crumbled
  • 12 fresh 9 lb ham shank or butt
  • 1 14 tsp ground sage
  • 12 tsp black pepper
  • 4 garlic cloves minced

Directions

  1. In a bowl mix all ingredients together except ham
  2. Remove rind from ham Score fat with a knife
  3. Rub mixture over ham Wrap ham in foil or plastic and refrigerate overnight
  4. Heat oven to 425
  5. Unwrap ham
  6. Place in a 13 x 9-inch cake pan
  7. Roast uncovered for 20 minutes
  8. Reduce heat to 325
  9. Baste with drippings every 30 minutes for about 4 hours or until meat thermometer registers 160 internal temperature
