Roasted Garlic Potatoes

Ingredients

• Mazola no stick corn oil cooking spray
• 2 Tbsp Mazola corn oil
• 1 clove garlic crushed
• 4 medium potatoes unpeeled sliced 18 inch thick about 1 lb
• 2 Tbsp grated Parmesan cheese
• 14 tsp pepper

Directions

1. Spray large baking sheet with cooking spray
2. In small bowl combine corn oil and garlic
3. Arrange potato slices on baking sheet
4. Brush with corn oil mixture
5. Sprinkle with Parmesan and pepper
6. Bake at 400 for 30 minutes or until lightly browned and crisp
7. Makes 4 servings
