Roasted Potatoes With Sour Cream

Ingredients

  • 2 Tbsp butter melted
  • 1 lb small new potatoes
  • salt and ground pepper
  • 14 c sour cream light

Directions

  1. Preheat oven to 400
  2. Brush jelly roll pan lightly with butter
  3. Slice potatoes 12-inch thick discarding ends and arrange on prepared pan
  4. Brush with butter and sprinkle with salt and pepper
  5. Bake 15 minutes
  6. Turn potatoes brush with remaining butter and sprinkle with salt and pepper
  7. Bake 10 minutes more or until tender and golden
  8. Transfer potatoes to serving platter and keep warm
  9. To serve spread 12 teaspoon sour cream on each slice
