1 fryer-broiler chicken about 3 to 4 lb cut into 8 pieces
2 Tbsp extra-virgin olive oil
1 onion halved lengthwise and slivered
1 Tbsp garlic finely minced
1 sprig fresh rosemary leaves finely minced
Salt and pepper to taste
23 c prepared marinara sauce
12 c water
Directions
Rinse the chicken pieces removing any excess fat and the wing tips
Pat dry
Place the olive oil in a Dutch oven over low heat and saute the onion stirring occasionally for 5 minutes Add the garlic and cook stirring 5 minutes longer
