Roasted Rosemary Chicken

Ingredients

  • 1 fryer-broiler chicken about 3 to 4 lb cut into 8 pieces
  • 2 Tbsp extra-virgin olive oil
  • 1 onion halved lengthwise and slivered
  • 1 Tbsp garlic finely minced
  • 1 sprig fresh rosemary leaves finely minced
  • Salt and pepper to taste
  • 23 c prepared marinara sauce
  • 12 c water

Directions

  1. Rinse the chicken pieces removing any excess fat and the wing tips
  2. Pat dry
  3. Place the olive oil in a Dutch oven over low heat and saute the onion stirring occasionally for 5 minutes Add the garlic and cook stirring 5 minutes longer
  4. Add the minced rosemary leaves
  5. Preheat the oven to 375
