Roasted Smoked Goose

Ingredients
- 12 c chopped onion
- 14 c butter
- 4 c dry bread
- water
- 1 tsp salt
- 12 tsp pepper
- 2 eggs
- 1 lb sausage
- 1 6 to 10 lb goose
Directions
- Cut snapping turtle meat into steaks thick as possible and batter down with hands
- Saute in butter and season to taste Serve with jelly or appropriate sauce
