Rolled Pizza
Ingredients
- 1 pkg frozen pizza enough for a standard size pizza
- 2 Tbsp olive oil
- 2 garlic cloves
- 2 medium yellow onions
- 3 medium red bell peppers cored and sliced
- 14 c fresh chopped parsley
- 1 tsp dried oregano
- salt to taste
- 12 c Parmesan cheese
- 1 28 oz can crushed tomatoes
- 1 16 oz pkg Mozzarella cheese shredded
Directions
- Press dough into an 18 x 13-inch lightly oiled pan
- Heat in a frying pan the garlic onions and peppers using the olive oil also
- Saute a few minutes cover and reduce the heat to low Cool the pepper mixture over low heat for 20 minutes stirring occasionally
- Add everything except for the cheeses to the pan until the excess water evaporates
- The peppers should be very tender and the mixture not watery
- Allow the mixture to cool completely
- Spread 12 of the mixture lengthwise down the center of the dough
- Add half of each cheese
- Fold one side of dough over mixture
- Repeat and fold other side over
- Bake in preheated oven at 375 for 45 minutes or until golden brown
