Rolled Stuffed Flank Steak

Ingredients

  • 1 1 12 to 2 lb flank steak
  • 1 tsp salt
  • 18 tsp pepper
  • 1 Tbsp prepared mustard
  • 1 12 c day-old bread cut in 12-inch cubes
  • 1 tsp poultry seasoning
  • 1 medium onion chopped
  • 12 c chopped celery
  • 14 c melted shortening
  • 2 Tbsp flour
  • 1 c water or beef broth

Directions

  1. Score steak on both sides of meat
  2. Sprinkle both sides with salt and pepper
  3. Spread mustard over top
  4. Toss bread poultry seasoning onion and celery with shortening
  5. Spoon mixture evenly over top of steak
  6. Roll up beginning with narrow end
  7. Fasten with skewers
  8. Brown well on all sides in hot fat in Dutch oven over medium heat
  9. Add water
  10. Cover tightly
  11. Cook over low heat for 1 12 hours or until tender
  12. Or cover and bake in moderate oven 350 for 2 hours
  13. Makes 6 to 8 servings
