Rollettes

Ingredients

  • 1 12 lb round steak 14-inch thick
  • 3 strips bacon
  • 14 c chopped onion
  • 1 c bread crumbs
  • 14 c chopped parsley
  • 14 c Parmesan cheese
  • 3 Tbsp olive oil
  • 1 can tomato paste
  • 2 c hot water
  • 1 clove minced garlic
  • 1 12 tsp salt
  • 14 tsp pepper
  • pinch of basil or marjoram
  • cooked spaghetti or favorite pasta

Directions

  1. Cut steak 6 oblong pieces or have done at the butchers Sprinkle with salt and pepper
  2. Pound thin with edge of plate
  3. Top each with half strip bacon
  4. Mix crumbs onion parsley and cheese Spread over bacon
  5. Roll up and secure with toothpicks or string Brown gently on all sides in hot oil
  6. Mix tomato paste and remaining ingredients except pasta
  7. Pour over rolls
  8. Cover tightly and simmer 1 12 hours or until tender
  9. Remove toothpicks Serve over spaghetti or favorite pasta
