RonS Baked Corn Casserole

Ingredients

  • 1 can creamed corn
  • 1 can Niblets corn
  • 1 box Jiffy corn muffin mix
  • 12 pt sour cream
  • 14 lb butter or margarine
  • 2 eggs

Directions

  1. In a small bowl beat the eggs with melted margarine
  2. In a larger bowl combine the corn and sour cream
  3. Stir in the butter and egg mixture
  4. Add the corn muffin mix and mix well
  5. Pour into a well-greased casserole or Pyrex baking dish 9 x 13-inch or smaller
  6. Bake at 350 for 1 hour will be lightly browned on top
  7. Do not overbake
