Rosemary Roasted Potatoes

Ingredients
- 2 lb red new potatoes scrubbed and quartered
- 2 Tbsp olive oil
- 1 Tbsp chopped fresh rosemary or 1 tsp dried
- 1 clove garlic minced
- 12 tsp salt
- fresh ground pepper to taste
Directions
- Preheat oven to 425
- Place potatoes in a large shallow baking dish that will hold all of them in a single layer
- Add the remaining ingredients and stir to coat well
