Rosemary Roasted Potatoes

Ingredients

  • 2 lb red new potatoes scrubbed and quartered
  • 2 Tbsp olive oil
  • 1 Tbsp chopped fresh rosemary or 1 tsp dried
  • 1 clove garlic minced
  • 12 tsp salt
  • fresh ground pepper to taste

Directions

  1. Preheat oven to 425
  2. Place potatoes in a large shallow baking dish that will hold all of them in a single layer
  3. Add the remaining ingredients and stir to coat well
