Ruben Casserole

Ingredients

  • 1 32 oz jar sauerkraut drained and rinsed
  • 12 c chopped onion
  • 12 c parsley
  • 2 Tbsp caraway seed
  • 4 c Swiss cheese shredded and divided
  • 1 13 c Thousand Island dressing divided
  • 1 lb can corned beef sliced thin
  • 6 slices rye bread cut in one inch cubes
  • 12 c margarine melted

Directions

  1. Combine kraut onion parsley and seed in 13 x 9 x 2-inch pan Top with 2 cups cheese and 23 cup dressing
  2. Layer beef slices Add rest of cheese and dressing
  3. Toss bread cubes with margarine and spread on top
  4. Bake in 375 oven for 35 minutes
