Russian Eggs

Ingredients

  • 14 eggs
  • 1 green pepper diced
  • 1 large onion sliced
  • seasoning Tabasco garlic oregano
  • 8 slices white bread
  • cooked bacon ham or sausage
  • 1 can sliced water chestnuts drained
  • 2 cans mushrooms drained
  • 4 tomatoes diced
  • sharp Cheddar cheese slices

Directions

  1. Beat eggs and season to taste
  2. Simmer pepper and onion rings until tender-crisp
  3. Line well-oiled 9 x 12-inch pan with bread slices
  4. Cover bread with meat and layer vegetables except tomatoes over meat
  5. Pour eggs over all
  6. Press down
  7. Let stand overnight
