Russian Pancakes Or Blini
Ingredients
- 1 pkg dry yeast
- 3 c lukewarm milk
- 3 c flour buckwheat if possible
- 3 eggs separated
- 12 c butter
- 12 tsp salt
Directions
- Dissolve yeast in 14 cup milk or enough to make a sponge Let rise in a warm place about 3 hours
- Cream egg yolks butter and salt
- Add yeast sponge remaining flour and remaining milk Beat until smooth
- Cover
- Let stand for 30 minutes
- Beat egg whites until stiff and fold into batter
- Butter a skillet lightly
- Proceed like for pancakes about 3 inches in diameter
