Russian Sauerkraut Soup

Ingredients

  • 1 c chopped onion
  • 2 cloves garlic minced
  • 4 Tbsp butter divided
  • 14 lb diced pork 1 chop should do it
  • 2 14 oz cans chicken broth
  • 2 14 oz cans beef broth
  • 1 small can sauerkraut drained
  • 2 Tbsp flour
  • 2 Tbsp long grain rice optional

Directions

  1. Cook onion and garlic in 2 tablespoons butter until onion is tender
  2. Add pork and 1 cup of either broth
  3. Cook over low heat for 20 minutes
  4. Add balance of both broths and the sauerkraut Cover and simmer for 45 minutes
  5. Blend flour and the 2 tablespoons butter
  6. Add to soup
  7. Cook and stir until thickened
  8. If you wish add rice before the last 20 minutes of cooking
  9. Makes 8 to 10 servings
