RuthS Poppy Seed Orange Cake

Ingredients

  • 4 egg whites
  • 1 23 c sifted all-purpose flour
  • 2 tsp baking powder
  • 14 tsp salt
  • 34 c sugar
  • 1 Tbsp poppy seed
  • 12 c vegetable oil
  • 12 c orange juice
  • 2 tsp grated orange rind

Directions

  1. Preheat oven to 350
  2. Cover bottom of 8 12 x 4 12 x 2 12-inch loaf pan with nonstick cooking spray
  3. In small mixing bowl beat egg whites with electric mixer until stiff peaks form Set aside
  4. Combine flour baking powder salt sugar and poppy seed in a large mixing bowl
  5. Add oil and orange juice beat with mixer at medium speed until batter is smooth
  6. Batter will be thick
  7. Add orange rind and 13 of egg whites stir gently
  8. Fold in remaining egg whites
  9. Pour batter into prepared pan
  10. Bake for 45 minutes or until toothpick comes out clean
  11. Cool in pan for 10 minutes
  12. Remove and cool on wire rack
  13. Serves 16
