RuthS Poppy Seed Orange Cake
Ingredients
- 4 egg whites
- 1 23 c sifted all-purpose flour
- 2 tsp baking powder
- 14 tsp salt
- 34 c sugar
- 1 Tbsp poppy seed
- 12 c vegetable oil
- 12 c orange juice
- 2 tsp grated orange rind
Directions
- Preheat oven to 350
- Cover bottom of 8 12 x 4 12 x 2 12-inch loaf pan with nonstick cooking spray
- In small mixing bowl beat egg whites with electric mixer until stiff peaks form Set aside
- Combine flour baking powder salt sugar and poppy seed in a large mixing bowl
- Add oil and orange juice beat with mixer at medium speed until batter is smooth
- Batter will be thick
- Add orange rind and 13 of egg whites stir gently
- Fold in remaining egg whites
- Pour batter into prepared pan
- Bake for 45 minutes or until toothpick comes out clean
- Cool in pan for 10 minutes
- Remove and cool on wire rack
- Serves 16
