Sage-Onion Potatoes

Ingredients

  • 1 12 lb potatoes small scrubbed but unpared and cut into 14-inch slices
  • 2 Tbsp butter or margarine
  • 3 Tbsp oil
  • 1 to 1 12 c boiling water
  • 8 scallions finely chopped
  • 6 sage leaves or 12 tsp dried sage
  • 3 Tbsp chopped fresh parsley
  • salt
  • pepper

Directions

  1. Heat butter and oil in a large heavy skillet
  2. Add the sliced potatoes turn them to coat thoroughly in the butter and oil then cook over medium heat for 20 minutes
  3. Turn potatoes often so they cook evenly
  4. Carefully add 1 cup boiling water to the potatoes in the pan
  5. Add the scallions sage parsley and season with salt and pepper
  6. Boil uncovered for 10 minutes until water evaporates
  7. If potatoes arent done add 13 cup boiling water and cook 5 minutes more
  8. Serve at once
  9. Serves 4 315 calories per serving
