Sage-Onion Potatoes
Ingredients
- 1 12 lb potatoes small scrubbed but unpared and cut into 14-inch slices
- 2 Tbsp butter or margarine
- 3 Tbsp oil
- 1 to 1 12 c boiling water
- 8 scallions finely chopped
- 6 sage leaves or 12 tsp dried sage
- 3 Tbsp chopped fresh parsley
- salt
- pepper
Directions
- Heat butter and oil in a large heavy skillet
- Add the sliced potatoes turn them to coat thoroughly in the butter and oil then cook over medium heat for 20 minutes
- Turn potatoes often so they cook evenly
- Carefully add 1 cup boiling water to the potatoes in the pan
- Add the scallions sage parsley and season with salt and pepper
- Boil uncovered for 10 minutes until water evaporates
- If potatoes arent done add 13 cup boiling water and cook 5 minutes more
- Serve at once
