Salmon CasseroleLow-Fat

Ingredients

  • 14 c chopped onion
  • 1 8 oz can salmon without oil drained and crumbled
  • 12 c diced celery
  • 12 c red or green pepper
  • 2 tsp dry mustard
  • 1 Tbsp fresh parsley chopped
  • 4 c soft French bread crumbs
  • 1 12 c skim milk
  • 2 Tbsp low-fat mayonnaise
  • 1 Tbsp grated Parmesan cheese
  • nonstick vegetable spray
  • paprika

Directions

  1. Coat a 2-quart shallow casserole with nonstick spray set aside
  2. In a large bowl toss together the onion crumbled salmon celery bell pepper mustard parsley and bread crumbs
  3. Place milk in a 2-cup measure
  4. Blend in mayonnaise
  5. Pour over the salmon mixture and thoroughly combine
  6. Spoon mixture into the prepared casserole
  7. Bake in the preheated 350 oven for about 35 minutes
