Salmon Croquettes
Ingredients
- 1 large can pink or red salmon
- 3 Tbsp Crisco
- 13 c flour
- 12 c milk
- 2 Tbsp chopped onion
- 2 tsp lemon juice
- 14 tsp salt
- dash of pepper
- 34 c bread crumbs
- 1 beaten egg
- 2 Tbsp water
Directions
- Melt Crisco in small pan blend in flour
- Add milk
- Cook and stir until very thick and smooth
- Remove from heat
- Pour into bowl and add onion lemon juice and seasonings
- Stir in salmon Shape into balls
- Roll in bread crumbs
- Combine egg with water Dip balls in mixture
- Roll in bread crumbs
- Deep fry until browned about 3 minutes
- Serve plain or with cream gravy with peas
