Salmon Croquettes

Ingredients
- 3 Tbsp butter melted
- 13 c flour
- 1 c milk
- 3 eggs
- 1 large salmon
- 1 Tbsp onion minced
- 1 Tbsp Worcestershire sauce
- 2 Tbsp lemon juice
- salt and pepper
- cracker crumbs
Directions
- Blend butter
- and
- flour
- Addmilk
- and
- 1 egg
- Cook until thickenedStir in salmon onion Worcestershire sauce lemon juice
- salt
- and
- pepperCook until mixture begins to bubble Add 1 eggContinue cooking until egg whites harden Chill for
- a few
- hours
- Shape
- into balls
- Roll in crumbs Dip into beaten egg again and roll in crumbs
- Fry in deep hot fat
- Yields 6 servings
