Salmon Cutlets

Ingredients

  • 1 large can salmon
  • 2 c mashed potatoes
  • 1 egg slightly beaten
  • 1 12 tsp salt
  • 14 tsp pepper
  • fine sifted bread crumbs

Directions

  1. Remove bones and skin from salmon mash with fork
  2. Add potatoes salt pepper and beaten egg
  3. Mix well
  4. Form into cutlets
  5. Roll in crumbs
  6. Heat oil and fry
  7. Drain on absorbent paper
