Salmon Cutlets

Ingredients
- 1 large can salmon
- 2 c mashed potatoes
- 1 egg slightly beaten
- 1 12 tsp salt
- 14 tsp pepper
- fine sifted bread crumbs
Directions
- Remove bones and skin from salmon mash with fork
- Add potatoes salt pepper and beaten egg
- Mix well
- Form into cutlets
- Roll in crumbs
- Heat oil and fry
- Drain on absorbent paper
