Salmon Loaf

Ingredients

  • 1 16 oz can salmon
  • 1 Tbsp vinegar or lemon juice
  • cold water
  • 2 medium eggs beaten
  • 12 tsp salt
  • 18 tsp black pepper
  • 1 slice fresh bread finely crumbled
  • 14 c finely cut celery and leaves
  • 2 Tbsp finely cut green onions
  • 1 Tbsp green pepper cut fine

Directions

  1. Preheat oven to 350 Use 7 12 x 2 12-inch loaf pan and spray with cooking spray
  2. Drain salmon saving liquid Discard skin but save bones
  3. Flake salmon lightly but well with fork
  4. Crush bones calcium bonus and mix
  5. Add vinegar to salmon liquid and enough cold water to make 12 cup total liquid
  6. Add to salmon
  7. Add all remaining ingredients and mix well
  8. Pack into loaf pan
  9. Bake for 1 hour
  10. Leave loaf in pan for 5 minutes before unmolding onto serving plate
