Salmon Steaks With Dill Sauce

Ingredients

  • 4 1-inch thick salmon steaks
  • 1 small onion sliced
  • 12 lemon sliced
  • 1 bay leaf
  • 14 tsp salt
  • 34 c milk
  • 1 Tbsp all-purpose flour
  • 2 tsp Dijon mustard
  • 12 to 34 tsp dill seed
  • 14 tsp grated lemon rind
  • 14 tsp salt
  • dash of white pepper
  • 1 egg yolk beaten
  • 1 Tbsp lemon juice

Directions

  1. Place salmon steaks in 10-inch skillet
  2. Add enough water to cover
  3. Top with onion lemon slices and bay leaf sprinkle with 14 teaspoon salt
  4. Bring to a boil
  5. Cover reduce heat and simmer for 8 minutes or until fish flakes easily when tested with a fork
  6. Combine milk and flour in a saucepan stirring well
  7. Add mustard dill seed lemon rind 14 teaspoon salt and pepper Cook over medium heat stirring constantly until thickened Gradually stir about 14 of hot milk mixture into egg yolk add to remaining hot milk mixture stirring constantly
  8. Cook 1 minute stirring constantly
  9. Add lemon juice mixing well
  10. Remove salmon steaks from skillet
  11. Spoon sauce over salmon
  12. Garnish with reserved lemon slices if desired
  13. Yields 4 servings
