San Antonio Skillet Supper
Ingredients
- 12 lb smoked sausage
- 1 c white rice
- 1 14 12 oz can stewed tomatoes
- 1 c water
- 23 c thick and chunky salsa or picante sauce
- 1 8 oz can dark red kidney beans rinsed and drained
- avocado slices sour cream and chopped cilantro optional toppings
Directions
- Cook sausage in half lengthwise
- Cut crosswise into 14-inch slices
- In a 10-inch skillet combine rice sausage and remaining ingredients except optional toppings
- Mix well breaking up tomatoes with large spoon
- Bring to boil
- Reduce heat
- Cover and simmer 20 minutes
- Remove from heat let stand covered 5 minutes
- Top as desired and serve with additional salsa or picante sauce
- Makes 4 servings
