Santa Fe Chicken

Ingredients

  • 1 14 lb chicken breasts boned and skinned
  • 1 tsp paprika
  • 1 tsp salt
  • 14 tsp pepper
  • 2 tsp olive oil or butter
  • 1 medium onion chopped
  • 1 small green pepper chopped
  • 1 garlic clove minced
  • 1 10 oz can diced Ro-Tel tomatoes and green chilies
  • 1 12 c instant rice uncooked
  • 34 c 3 oz Monterey Jack cheese shredded
  • 1 can chicken broth

Directions

  1. Cut chicken into thin strips
  2. Sprinkle with paprika salt and pepper
  3. Heat olive oil or butter in 10-inch skillet over medium-high heat
  4. Add chicken to oil and cook for 2 minutes
  5. Add chopped onion green pepper and garlic to skillet
  6. Cook until tender about 4 minutes stirring frequently
