Santa Fe Chicken
Ingredients
- 1 14 lb chicken breasts boned and skinned
- 1 tsp paprika
- 1 tsp salt
- 14 tsp pepper
- 2 tsp olive oil or butter
- 1 medium onion chopped
- 1 small green pepper chopped
- 1 garlic clove minced
- 1 10 oz can diced Ro-Tel tomatoes and green chilies
- 1 12 c instant rice uncooked
- 34 c 3 oz Monterey Jack cheese shredded
- 1 can chicken broth
Directions
- Cut chicken into thin strips
- Sprinkle with paprika salt and pepper
- Heat olive oil or butter in 10-inch skillet over medium-high heat
- Add chicken to oil and cook for 2 minutes
- Add chopped onion green pepper and garlic to skillet
- Cook until tender about 4 minutes stirring frequently
