Sante Fe Style Chicken Breasts
Ingredients
- 2 ripe avocados
- 2 small ripe tomatoes diced
- 1 small onion diced
- 2 Tbsp fresh cilantro chopped
- 3 Tbsp freshly squeezed lime juice
- 2 cloves garlic crushed
- 12 tsp chili powder
- 1 Tbsp butter
- 2 Tbsp orange marmalade
- salt and pepper to taste
- 4 boneless chicken breasts
Directions
- Cut avocado into large dice
- Combine with tomatoes onion and cilantro
- Sprinkle with 2 tablespoons lime juice
- Add salt and pepper if desired
- Toss gently
- Refrigerate covered until ready to serve
- Melt butter in a skillet and saute the garlic
- Lightly brown chicken on each side then remove to a plate
- To drippings in skillet add marmalade chili powder salt pepper and remaining lime juice
- Return chicken to skillet and coat with glaze
- Simmer until cooked through
- Serve with guacamole
