Sauerkraut Casserole

Ingredients

  • 4 slices bacon diced
  • 1 lb ground beef
  • 1 medium onion chopped
  • 1 large can sauerkraut
  • 2 c mashed potatoes
  • salt and pepper

Directions

  1. Fry bacon until crisp drain and set aside
  2. Brown beef and onion season with salt and pepper
  3. Mix in bacon
  4. Place in bottom of a 2-quart dish
  5. Spread sauerkraut and liquid on top Cover with mashed potatoes
  6. Dot with butter
  7. Cover and bake at 350 for 30 minutes Remove cover the last 5 to 10 minutes to brown potatoes
