Sauerkraut Casserole

Ingredients
- 4 slices bacon diced
- 1 lb ground beef
- 1 medium onion chopped
- 1 large can sauerkraut
- 2 c mashed potatoes
- salt and pepper
Directions
- Fry bacon until crisp drain and set aside
- Brown beef and onion season with salt and pepper
- Mix in bacon
- Place in bottom of a 2-quart dish
- Spread sauerkraut and liquid on top Cover with mashed potatoes
- Dot with butter
- Cover and bake at 350 for 30 minutes Remove cover the last 5 to 10 minutes to brown potatoes
