Sauerkraut Soup

Ingredients
- 1 lb smoked sausage cut in 12 inch pieces
- 5 medium potatoes peeled and cubed
- 2 medium onions chopped
- 2 carrots cut in 14 inch slices
- 3 cans 14 oz each chicken broth
- 1 large can tomatoes
- 1 can 32 oz sauerkraut rinsed drained and cut with scissors
Directions
- In large soup pan combine sausage potatoes onion carrots and chicken broth bring to a boil
- Reduce heat and simmer 30 minutes or until potatoes are tender
- Add sauerkraut and tomatoes Return to boil
- Reduce heat and simmer 30 minutes longer
- If thinner soup is desired add more broth
