Sausage Bean Supper

Ingredients
- 1 c dried lima beans
- 3 c water
- 1 lb pork sausage
- 12 c chopped onion
- 12 c chopped celery
- 14 c chopped green pepper
- 1 16 oz can whole tomatoes chopped coarsely
- 12 c tomato sauce
- 14 tsp salt
- 18 tsp pepper
Directions
- Sort and wash lima beans
- Put in a large saucepan with 3 cups water
- Bring to a boil
- Cook 2 minutes
- Remove from heat cover and let soak 1 hour
- Place beans over medium heat until tender Add more water if necessary
- Combine sausage onion celery and green pepper in a large skillet
- Cook until sausage is brown Stir into crumbles drain
- Add seasoning
- Stir well
- Spoon into lightly greased 2-quart casserole dish
- Bake at 350 for 20 minutes
- Serves 6
