Sausage Chowder

Ingredients

  • 1 lb bulk pork sausage
  • 1 16 oz can kidney beans undrained
  • 1 28 oz can tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 12 tsp thyme
  • 12 tsp oregano
  • 1 c diced potato
  • 1 medium green pepper
  • salt and pepper to taste
  • 2 c water
  • 2 Tbsp parsley

Directions

  1. Brown
  2. sausage
  3. in large boiler or Dutch oven
  4. Crumble sausage
  5. well
  6. and add onion and garlic
  7. Drain well
  8. Stir in all ingredients
  9. except potatoes and green pepper
  10. Cover and simmer 2
  11. hours stirring occasionally
  12. Add green pepper and potatoes and simmer 20 additional minutes
