Sausage Zucchini Boats
Ingredients
- 4 medium zucchini
- 1 lb pork sausage
- 14 c chopped onion
- 12 c fine cracker crumbs
- 1 slightly beaten egg
- 12 c grated Parmesan cheese
- 14 tsp salt
- 14 tsp thyme
- dash of garlic powder
- dash of black pepper
Directions
- Cook whole zucchini in salted boiling water until tender 7 to 10 minutes
- Cut in 12 lengthwise segments
- Scoop squash from shells and mash
- Cook sausage with onion
- Drain off excess fat Stir in mashed zucchini reserving 2 tablespoons Parmesan cheese Add remaining ingredients
- Mix with a spoon into shells
- Place shells in a shallow baking dish
- Sprinkle with remainder of Parmesan cheese and dash of paprika
- Bake in moderate oven at 350 for 25 to 30 minutes
