Sauteed CalfS Liver With Onions

Ingredients

  • 4 Tbsp olive oil
  • 1 c thinly sliced onions
  • 14 tsp dried sage leaves
  • 1 lb calf liver cut crosswise into 14-inch strips
  • salt and pepper to taste
  • 2 Tbsp wine vinegar preferably white
  • 2 Tbsp finely chopped fresh parsley

Directions

  1. Heat 2 tablespoons oil in heavy skillet
  2. Add onions and cook stirring frequently for 7 to 8 minutes
  3. Stir in sage and cook 2 to 3 minutes longer or until onions are limp and slightly colored Set skillet off heat
