Sauteed Zucchini With Raisins

Ingredients

  • 4 lb zucchini
  • 2 Tbsp oil
  • 2 Tbsp butter
  • salt and pepper
  • 3 Tbsp wine vinegar
  • 12 c raisins

Directions

  1. Cut zucchini in half lengthwise and cut into slices about 12-inch thick
  2. In a large frying pan heat 1 tablespoon of the oil and 1 tablespoon of butter over medium-high heat
  3. Add half the zucchini and brown on both sides
  4. Add the remaining oil and butter saute the rest of the zucchini
  5. Remove with slotted spoon
