Sauteed Zucchini With Raisins

Ingredients
- 4 lb zucchini
- 2 Tbsp oil
- 2 Tbsp butter
- salt and pepper
- 3 Tbsp wine vinegar
- 12 c raisins
Directions
- Cut zucchini in half lengthwise and cut into slices about 12-inch thick
- In a large frying pan heat 1 tablespoon of the oil and 1 tablespoon of butter over medium-high heat
- Add half the zucchini and brown on both sides
- Add the remaining oil and butter saute the rest of the zucchini
- Remove with slotted spoon
