Savory Oven-Fried Eggplant

Ingredients

  • 1 eggplant pared
  • 2 eggs
  • 1 c bread crumbs
  • 14 tsp salt
  • 18 tsp paprika
  • 18 tsp black pepper
  • 2 tsp Parmesan cheese
  • 12 tsp garlic salt
  • 14 tsp minced parsley
  • 14 tsp dried basil
  • pinch of ground red pepper
  • 1 Tbsp Crisco
  • 1 lemon sliced for garnish

Directions

  1. Preheat oven to 375
  2. Slice eggplant into 12-inch slices Beat eggs slightly
  3. Drop crumbs and seasonings into blender jar and blend well
  4. Pour crumbs on plate
  5. Grease 11 x 17-inch jelly roll pan or baking pan with Crisco heat pan for several minutes in hot oven
  6. Dip eggplant in egg and then into crumbs
  7. Place on hot baking sheet
  8. Bake 15 minutes on each side
  9. Serve immediately with lemon slices
