Scallop Puffs

Ingredients

  • 3 tsp lemon zest
  • 1 lb scallops cut finely or put through food processor
  • 3 cloves garlic minced
  • 3 Tbsp butter
  • 3 Tbsp dill
  • 2 c Swiss cheese grated
  • 1 loaf French bread
  • 2 14 c mayonnaise

Directions

  1. Slice French bread in thin slices
  2. Set aside
  3. Saute scallops lemon zest and garlic in butter then add dill
  4. Let cool
  5. Add Swiss cheese and mayo
  6. Place on slices of French bread
  7. Bake in a preheated 350 oven for 15 to 25 minutes until puffed and golden brown
