Scallop Saute

Ingredients

  • 1 c butter
  • 1 lb fresh mushrooms sliced
  • 2 medium green peppers chopped
  • 5 to 8 green onions chopped
  • 1 clove garlic minced
  • 2 lb scallops well drained
  • salt and pepper
  • 14 c white wine or vermouth
  • hot cooked rice

Directions

  1. Melt butter in large skillet
  2. Saute mushrooms green peppers onions and garlic over medium-high heat until soft
  3. Remove with slotted spoon
  4. Add scallops to skillet and saute over high heat As scallops begin to shrink return vegetables to skillet salt and pepper to taste
  5. Stir in wine
  6. Serve immediately over hot rice Serve with your best white wine
