Scallop Saute
Ingredients
- 1 c butter
- 1 lb fresh mushrooms sliced
- 2 medium green peppers chopped
- 5 to 8 green onions chopped
- 1 clove garlic minced
- 2 lb scallops well drained
- salt and pepper
- 14 c white wine or vermouth
- hot cooked rice
Directions
- Melt butter in large skillet
- Saute mushrooms green peppers onions and garlic over medium-high heat until soft
- Remove with slotted spoon
- Add scallops to skillet and saute over high heat As scallops begin to shrink return vegetables to skillet salt and pepper to taste
- Stir in wine
- Serve immediately over hot rice Serve with your best white wine
