Scalloped Eggplant
Ingredients
- 1 large eggplant
- 1 Tbsp cooking oil
- 1 bell pepper chopped
- 1 small onion chopped
- 2 c canned or chopped raw tomatoes
- 1 tsp salt
- 14 tsp black pepper
- 1 Tbsp oleo
- 1 c bread crumbs
Directions
- Peel eggplant and dice in small cubes
- Saute pepper and onion until tender
- Add tomatoes eggplant salt and pepper cook 15 minutes
- Place in a casserole dish
- Melt oleo in a skillet Add bread crumbs and stir
- Sprinkle bread crumbs over eggplant Bake in a 350 oven for 15 minutes or until eggplant is tender and crumbs are brown
