Scalloped Eggplant

Ingredients

  • 1 large eggplant
  • 1 Tbsp cooking oil
  • 1 bell pepper chopped
  • 1 small onion chopped
  • 2 c canned or chopped raw tomatoes
  • 1 tsp salt
  • 14 tsp black pepper
  • 1 Tbsp oleo
  • 1 c bread crumbs

Directions

  1. Peel eggplant and dice in small cubes
  2. Saute pepper and onion until tender
  3. Add tomatoes eggplant salt and pepper cook 15 minutes
  4. Place in a casserole dish
  5. Melt oleo in a skillet Add bread crumbs and stir
  6. Sprinkle bread crumbs over eggplant Bake in a 350 oven for 15 minutes or until eggplant is tender and crumbs are brown
