Scalloped Eggplant

Ingredients

  • 1 c eggplant
  • 1 c cracker crumbs
  • 1 medium onion chopped
  • 12 c cornbread crumbs
  • 12 c sharp cheese grated
  • 1 egg beaten
  • 12 tsp salt
  • 12 stick margarine
  • 12 Tbsp sugar
  • 12 c milk

Directions

  1. Peel and cube eggplant
  2. Boil in salted water until barely tender
  3. Drain
  4. Mix all ingredients but cheese and put in greased baking dish
  5. Top with grated cheese
  6. Bake at 350 for 30 minutes
  7. Serves 8
