Scalloped Eggplants

Ingredients

  • 1 medium egg plant
  • 1 beaten egg
  • 12 c milk
  • 2 tbsp melted butter
  • 1 chopped onion
  • 1 c cracker crumbs
  • 12 c cracker crumbs for topping

Directions

  1. Peel egg plant and cut in 1 inch cubes
  2. Cook in boiling salted water and drain
  3. Add eggs milk butter onion and 1 c of crackers
  4. Place in greased quart baking dish
  5. Top with cracker crumbs
  6. Bake for 30 minutes at 350 degrees
  7. Easy and good
