Scalloped Eggplants

Ingredients
- 1 medium egg plant
- 1 beaten egg
- 12 c milk
- 2 tbsp melted butter
- 1 chopped onion
- 1 c cracker crumbs
- 12 c cracker crumbs for topping
Directions
- Peel egg plant and cut in 1 inch cubes
- Cook in boiling salted water and drain
- Add eggs milk butter onion and 1 c of crackers
- Place in greased quart baking dish
- Top with cracker crumbs
- Bake for 30 minutes at 350 degrees
