Scallops With SherryServes 4

Ingredients
- 12 c flour
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
- 1 12 lb fresh scallops
- 34 c butter
- 6 to 8 Tbsp sherry
Directions
- Combine flour salt pepper and paprika
- Coat scallops with flour mixture
- Melt butter in a large frying pan
- Brown scallops on both sides
- Add sherry and simmer until tender approximately 15 minutes
- Serve over rice
