Ingredients

  • 12 lb scallops
  • 1 Tbsp instant minced onion
  • 1 whole green onion thinly sliced
  • 1 12 Tbsp sherry wine
  • 1 Tbsp tomato paste
  • 4 plum tomatoes diced
  • 2 Tbsp minced fresh cilantro
  • freshly ground pepper to taste
  • 2 Tbsp crumbled Feta cheese
  • 1 14 c cooked rice without salt

Directions

  1. Pat scallops on paper toweling
  2. Place in a microproof 1-quart casserole with onion wine tomato paste tomatoes and cilantro Toss together until well mixed Cover with lid or vented plastic wrap and microwave on High 3 12 to 4 minutes or until scallops are opaque stirring once
  3. Sprinkle with pepper and Feta cheese Toss together
  4. Spoon over rice in deep bowls Serves 2
