Seafood Macaroni Salad
Ingredients
- 1 12 lb cooked shrimp peeled and deveined
- 1 lb cooked crab meat
- 6 c cooked shell macaroni
- 2 c chopped raw cauliflower
- 2 c sliced celery
- 14 c chopped parsley
- 1 c chopped sweet pickles
- 14 c chopped onion
- 6 boiled eggs chopped
- 1 Tbsp capers chopped
- 3 Tbsp lemon juice
- mayonnaise as needed
Directions
- Cut large size shrimp into bite sized pieces
- Sprinkle with lemon juice
- Mix all ingredients together
- Chill
- Serve on salad greens
- Garnish with tomato wedges
- Serves 12 to 15
