Seafood Primavera

Ingredients

  • 14 c lemon juice
  • 2 tsp cornstarch
  • 14 tsp salt
  • 12 lb each scallops and large raw shrimp peeled and deveined
  • 14 c margarine
  • 8 oz fresh mushrooms sliced
  • 1 c thinly sliced carrots
  • 3 cloves garlic finely chopped
  • 12 tsp thyme leaves
  • 4 oz fresh pea pods
  • 14 c sliced green onions
  • 2 Tbsp dry sherry optional

Directions

  1. Combine lemon juice cornstarch and salt mix well
  2. Add scallops and shrimp
  3. Cover and marinate in refrigerator for 30 minutes
