Seafood Salad

Ingredients

  • 12 lb cod fillet thick as possible
  • about 1 12 c water
  • about 1 12 c chicken broth
  • 12 c mayonnaise
  • 1 tsp lemon juice
  • 18 tsp curry powder and 18 tsp chili powder
  • 18 tsp ground coriander seed
  • 12 lb fresh crabmeat or 2 6 oz pkg thawed crabmeat
  • 14 c toasted slivered almonds
  • 13 c chopped celery
  • 14 c halved seedless green grapes
  • fresh spinach or lettuce leaves

Directions

  1. Place cod in pan and pour enough water and chicken broth to cover
  2. Remove fish and bring liquid to boil
  3. Add cod reduce heat to low and simmer about 5 minutes or until cod is opaque and separates easily into large flakes
  4. Remove fish from liquid and cool
  5. Flake fish removing skin and bones
