Seafood Stuffed Mushrooms

Ingredients

  • 8 oz large stuffing mushrooms
  • 1 Tbsp finely chopped onion
  • 1 clove finely chopped garlic
  • 12 c chopped crab meat
  • 12 c chopped cooked shrimp
  • 14 c finely chopped Prosciutto
  • 14 c smoked Cheddar cheese
  • 1 Tbsp catsup

Directions

  1. Wash and drain mushrooms
  2. Hollow out and chop enough of the pieces to make 3 tablespoons
  3. Cook pieces with onion garlic and 1 teaspoon extra virgin olive oil
  4. Stir in crab shrimp Prosciutto and cheese along with catsup
  5. Stuff into mushroom crowns sprinkle with fine soft bread crumbs
  6. Bake at 425 for 6 to 8 minutes
