Senate Navy Bean Soup

Ingredients
- 1 lb dried navy or pea beans about 2 13 c
- water
- 2 Tbsp butter
- 12 c chopped celery
- 12 c chopped onion
- 1 garlic clove minced
- 1 lb bacon
- 1 12 tsp salt
- 14 tsp pepper
Directions
- Wash beans discard any stones or shriveled beans
- Drain and place in large saucepot
- Soak
- For quick soak method combine beans and 6 cups water
- Heat to boiling boil 2 minutes
- Remove from heat
- Cover let stand 1 hour
- Or cover beans with water and soak overnight
