Shanghi Casserole

Ingredients

  • 1 12 lb ground meat beef or turkey
  • 1 c chopped onions
  • 1 clove garlic minced
  • 1 Tbsp oil
  • 2 c sliced celery
  • 1 10 12 oz can mushroom soup
  • 12 c water
  • 1 10 oz pkg frozen mixed vegetables
  • 2 c cooked rice
  • 2 Tbsp soy sauce
  • 2 tsp salt
  • 12 tsp pepper
  • 1 3 oz can Chinese noodles

Directions

  1. Brown meat onions and garlic in oil
  2. Add celery and soup Cook mixed vegetables in 12 cup water 5 minutes
  3. Add vegetables and liquid to meat mixture
  4. Stir in rice and seasonings
  5. Turn into a greased 2 12-quart casserole dish
  6. Cover and bake 25 minutes in a 350 oven
  7. Remove cover
  8. Top with noodles
  9. Return to the oven for 5 minutes
  10. Makes 6 to 8 servings
  11. Freezes very well
