Shenandoah Apple Cake

Ingredients

  • 1 c cooking oil
  • 2 c sugar
  • 3 eggs
  • 1 14 tsp vanilla
  • 2 c sifted flour
  • 1 tsp salt
  • 3 c diced and pared apples
  • 1 c chopped walnuts
  • 1 Tbsp flour
  • 1 tsp baking soda
  • Caramel Topping recipe follows

Directions

  1. Beat together oil sugar eggs and vanilla about 3 minutes Add sifted dry ingredients then stir in apples
  2. Combine walnuts and 1 tablespoon flour stir into batter
  3. Pour into greased and floured 13 x 9 x 2-inch pan
  4. Bake at 350 for 1 hour or until cake tests done
  5. Cool in pan on rack
