ShepardS Pie
Ingredients
- Instant mashed potatoes for 6 people
- 1 egg
- 1 lb ground beef
- 1 onion chopped
- 23 c frozen sliced carrots thawed
- 2 Tbsp all purpose flour
- 12 c shredded cheddar cheese
- 2 tsp salt divided
- 1 c beef broth
- 12 tsp pepper divided
Directions
- Cook potatoes according to directions
- Cook beef and onion in large skillet over med-high heat stirring until it crumbles and loses its pink color
- Drain then return to pan
- Add carrots peas or corn can be substituted
- Stir in flour 1 tsp salt and 14 tsp pepper
- Add broth and cook stirring until slightly thickened
- Spoon into 11x17 inch lightly greased dish
- Stir egg into potatoes along with remaining 1 tsp salt and 14 tsp pepper Spoon over beef mixture
- Bake at 350 for 25 minutes
- Sprinkle with cheese and bake 5 minutes more
