Sherried Shrimp With Garlic

Ingredients

  • 1 lb fresh or frozen large shrimp in shells
  • 14 c dry sherry or orange juice
  • 2 Tbsp orange juice
  • 1 roasted red or green sweet pepper cut into strips
  • 10 pitted ripe olives halved
  • 2 Tbsp snipped parsley
  • 3 cloves garlic minced
  • 2 tsp capers drained
  • 2 tsp tomato paste
  • 18 tsp coarsely ground pepper
  • 1 tsp olive oil
  • French bread

Directions

  1. Thaw shrimp if frozen
  2. Peel and devein leaving tails intact set aside
  3. In large skillet combine sherry orange juice red pepper strips olives parsley garlic capers tomato paste and black pepper
  4. Bring to boiling
  5. Add shrimp
  6. Cook and stir for 1 to 3 minutes or until shrimp turns pink
  7. Remove from heat
  8. Stir in olive oil
  9. Serve with bread
