Sherried Shrimp With Garlic
Ingredients
- 1 lb fresh or frozen large shrimp in shells
- 14 c dry sherry or orange juice
- 2 Tbsp orange juice
- 1 roasted red or green sweet pepper cut into strips
- 10 pitted ripe olives halved
- 2 Tbsp snipped parsley
- 3 cloves garlic minced
- 2 tsp capers drained
- 2 tsp tomato paste
- 18 tsp coarsely ground pepper
- 1 tsp olive oil
- French bread
Directions
- Thaw shrimp if frozen
- Peel and devein leaving tails intact set aside
- In large skillet combine sherry orange juice red pepper strips olives parsley garlic capers tomato paste and black pepper
- Bring to boiling
- Add shrimp
- Cook and stir for 1 to 3 minutes or until shrimp turns pink
- Remove from heat
- Stir in olive oil
- Serve with bread
