SherwoodS Shrimp Marinara

Ingredients

  • 2 lb cooked shrimp
  • 14 c olive oil
  • 2 cloves garlic sliced
  • 1 1 lb 13 oz can tomatoes sieved and pureed
  • 1 12 tsp salt
  • 1 tsp oregano
  • 1 tsp chopped parsley
  • 14 tsp pepper
  • 14 c red wine optional
  • 3 c white rice

Directions

  1. Shell wash and drain the shrimp
  2. In a large skillet heat the oil and saute gently over medium-high heat for 5 minutes
  3. Remove the shrimp from the skillet and keep warm
  4. Add the garlic and saute until golden
  5. Stir in the tomatoes salt oregano parsley pepper and wine
  6. Cook rapidly uncovered for 15 minutes or until thickened stirring occasionally
  7. If the sauce becomes too thick add 14 to 12 cup water
  8. Add the shrimp and reheat gently Meanwhile cook the rice
  9. Serve immediately with the shrimp sauce Makes 8 servings
