SherwoodS Shrimp Marinara
Ingredients
- 2 lb cooked shrimp
- 14 c olive oil
- 2 cloves garlic sliced
- 1 1 lb 13 oz can tomatoes sieved and pureed
- 1 12 tsp salt
- 1 tsp oregano
- 1 tsp chopped parsley
- 14 tsp pepper
- 14 c red wine optional
- 3 c white rice
Directions
- Shell wash and drain the shrimp
- In a large skillet heat the oil and saute gently over medium-high heat for 5 minutes
- Remove the shrimp from the skillet and keep warm
- Add the garlic and saute until golden
- Stir in the tomatoes salt oregano parsley pepper and wine
- Cook rapidly uncovered for 15 minutes or until thickened stirring occasionally
- If the sauce becomes too thick add 14 to 12 cup water
- Add the shrimp and reheat gently Meanwhile cook the rice
- Serve immediately with the shrimp sauce Makes 8 servings
